Healthier Options

He loves oreos. He loves brownies. He loves chocolate chip cookies. He loves Blue Bell ice cream. He eats an entire bag of grapes in two days. He.never.stops.eating.

I'm married to a man who LOVES chocolate and sweets. Don't get me wrong, I love sugar too, but it doesn't love me. Well, actually it loves me TOO much--to the point it hangs around on my waist, my thighs, my face....everywhere basically.

I discovered this recipe on Summer Harms blog and I decided to try it because the ingredients are fairly natural. I made a few tweaks of my own and this recipe was a HIT with my husband. He loves these cookies and I don't feel bad about leaving them in the cookie jar for him.

Kyle's Cookies

1 cup natural peanut butter (I used mixture of creamy and crunchy)
1/2 cup brown sugar
2 eggs, divided
1 cup old-fashioned oats
1 tsp. baking soda
1/2 cup semi-sweet chocolate chips (I used dark chocolate and Kyle loves them)

Mix pb and brown sugar on medium speed until well blended, about 2 min. Add one of the eggs and mix just until combined. Add oats and soda, blend. Mix in chocolate chips. Add the last egg, using a fork to blend it into the dough. Line a baking sheet with parchment paper and use your hands to pack dough into 1-2 inch balls. Bake at 350 degrees for 7 minutes, use a fork to flatten at this point, then continue baking 2  minutes more. (I had to bake mine a little longer because they were too soft. I baked about 5 minutes longer rather than 2)

 I hope you enjoy them!! It's a wonderful summertime cookie to serve with milk or a glass of iced tea. That's what we have been loving of late....

Life as a wife is so sweet, and our God has been so faithful. He has provided beyond our wildest dreams and allowed us to start off our marriage wisely and financially strong. We are in awe of Him and celebrating each moment together.
